GRAPE VARIETIES:

White grapes, prevalently Chardonnay and Viognier

GRAPE YIELD PER HECTARE:

70-80 quintals.

GROWING LOCATION:

Vineyards stretched over sunny hillsides.

CHARACTERISTICS OF THE VINEYARDS:

Average age: 15 years.

WINE-MAKING PROCESS:

The grape bunches are picked by hand, placed in crates and immediately transferred to the cellars where they undergo soft pressing. They are then placed in the must from selected yeasts to start the fermentation process which lasts for 20 days at low temperature (14/16° C). At the end of the process, the wine is decanted and left on the fine lees until bottling.

AGEING:

The wine remains in stainless steel vats for a period of roughly 4 months.

ALCOHOL CONTENT:

13% vol.

RECOMMENDED PAIRINGS:

White meat, fish and fresh cheese. Also recommended for aperitifs and for spicy dishes.

SERVING TEMPERATURE:

8°-10°C.

Brilliant straw yellow colour with golden hues. Good consistency. To the nose, it presents a floral bouquet of acacia flowers and lemon blossoms with fruity hints that call to mind exotic fruit and yellow-flesh peaches, and finishes with the scent of citrus fruit rinds.

To the palate the wine is warm and full, with a fresh persistent finish.
