WINE-MAKING PROCESS:

Made from a rigorous selection of the best Sangiovese grapes from our wine estate, located at just a few kilometers from the Crete Senesi area (from which the wine takes its name: Cretum). After a brief period of cold soaking, or maceration, the must is obtained from a mild pressing of the marc and left to ferment slightly at a controlled temperature (10° C) in small stainless steel vats. It does not undergo the process of malolactic fermentation.

CHARACTERISTICS:

Pale ‘onion-skin’ pink in colour. Fruity with hints of cherry and strawberry.

ALCOHOL CONTENT:

12.5% vol.

RECOMMENDED PAIRINGS:

White meat and vegetable pies and, especially, raw fish dishes.

SERVING TEMPERATURE:

12°-14°C.
