Vinification:
Must is drawn off with gentle pressing. Fermented for more
than 20 days at low temperatures (14/16°). When fermentation
is complete, the wine is poured off and kept on the lees until it
is bottled.
Ageing:
Aged in stainless steel for about 4 months.
